Description
A comforting and velvety mashed butternut squash that is sweet and slightly savory, making it a perfect side for holidays or weeknight dinners.
Ingredients
- 1 medium butternut squash
- 2 tablespoons butter
- Salt, to taste
- Pepper, to taste
- 1/4 teaspoon nutmeg (optional)
- 1/4 cup milk or cream (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the butternut squash in half lengthwise and scoop out the seeds.
- Place the squash halves cut-side down on a parchment-lined baking sheet and roast for 30–40 minutes until fork-tender.
- Allow the squash to cool slightly, then scoop the flesh into a mixing bowl. Discard the skins.
- Mash the squash with butter, salt, pepper, and nutmeg (if using) until creamy.
- For added creaminess, stir in up to 1/4 cup milk or cream until you reach your desired consistency. Serve warm.
Notes
To preserve creaminess, add milk or cream slowly; reheat gently with a splash of milk if needed.
