Ingredients
- 1 lb lean ground beef or turkey
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 cup low-sodium beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon black pepper
- 1 teaspoon salt
- 4 whole grain hamburger buns
- 1 cup reduced-fat provolone cheese, shredded
Instructions
- Heat a large skillet over medium heat. Add the ground beef or turkey and cook until browned, breaking it up with a spoon.
- Drain any excess fat, then add the chopped onion, bell pepper, minced garlic, and sliced mushrooms. Cook until the vegetables are tender, about 5–7 minutes.
- Stir in the beef broth, Worcestershire sauce, Dijon mustard, black pepper, and salt. Bring to a simmer and cook for 10–15 minutes until thickened.
- Toast the whole grain buns until golden. This helps them hold up to the filling.
- Spoon the beef mixture onto the toasted buns, top with shredded provolone cheese, and let melt before serving.
