Description
A refreshing summer salsa made with diced watermelon, crunchy vegetables, and a zing of lime.
Ingredients
- 3 cups diced watermelon
- 1/2 cup diced red onion
- 1/2 cup diced cucumber
- 1/4 cup chopped fresh cilantro
- 1-2 jalapeños, minced (optional)
- Juice of 1 lime
- Salt to taste
Instructions
- In a large bowl, combine the diced watermelon, red onion, cucumber, cilantro, and jalapeños if using.
- Squeeze the fresh lime juice over the entire mixture.
- Season generously with salt and gently toss everything together until well mixed.
- Chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Serve with tortilla chips and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator. Best enjoyed fresh, but can last up to two days.
