Description

A refreshing summer salsa made with diced watermelon, crunchy vegetables, and a zing of lime.


Ingredients

  • 3 cups diced watermelon
  • 1/2 cup diced red onion
  • 1/2 cup diced cucumber
  • 1/4 cup chopped fresh cilantro
  • 1-2 jalapeños, minced (optional)
  • Juice of 1 lime
  • Salt to taste


Instructions

  1. In a large bowl, combine the diced watermelon, red onion, cucumber, cilantro, and jalapeños if using.
  2. Squeeze the fresh lime juice over the entire mixture.
  3. Season generously with salt and gently toss everything together until well mixed.
  4. Chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
  5. Serve with tortilla chips and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator. Best enjoyed fresh, but can last up to two days.
