Ingredients
- 2 teaspoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 cup lentils (green or brown)
- 6 cups vegetable broth
- 1 teaspoon turmeric
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 lemon, juiced
- Fresh parsley for garnish
Instructions
- Sauté the aromatic vegetables: In a large pot, heat olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until softened, about 5 minutes.
- Stir in the minced garlic, turmeric, and cumin. Cook for about 1 minute until fragrant.
- Add lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer covered for 25–30 minutes or until lentils are tender.
- Stir in lemon juice and season with salt and pepper to taste. Simmer for another minute to meld flavors.
- Ladle the soup into bowls, garnish with fresh parsley, and serve hot.
Notes
Rinse lentils before cooking to remove debris. Add lemon juice at the end for the best flavor. Soup may thicken upon refrigeration; add water or broth when reheating.
