Description
An irresistible blend of crispy bacon, seasoned potatoes, and melted cheese wrapped in soft tortillas, perfect for brunch or a hearty breakfast.
Ingredients
- 4 slices of bacon
- 2 tablespoons of canola oil
- 4 cups of potatoes, cut into 1-inch cubes
- 2 ½ tablespoons of taco seasoning mix
- 8 soft corn tortillas (6-inch)
- 8 eggs, well beaten
- ½ cup of shredded Monterey Jack cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Place the bacon on a baking sheet and bake for about 10 minutes until crispy. Once done, chop the bacon into bite-sized pieces.
- In a skillet, heat the canola oil over medium heat. Add the cubed potatoes and taco seasoning, cooking until the potatoes are soft and golden brown, about 15-20 minutes.
- Arrange the tortillas in a 13×9-inch baking dish.
- In another skillet, scramble the eggs over medium heat, removing from heat while still soft.
- Fill each tortilla with seasoned potatoes, scrambled eggs, chopped bacon, and sprinkle with cheese.
- Bake the assembled tacos for about 10 minutes, or until heated through and the cheese has melted.
- Serve immediately and enjoy!
Notes
Top tacos with fresh cilantro, avocado slices, or hot sauce for added flavor. Leftover tacos can be stored in an airtight container in the fridge for up to three days.
