A quick and easy weeknight dinner featuring tender chicken and crisp broccoli coated in a glossy teriyaki sauce.
Ingredients
- 1 lb boneless chicken breast, cut into bite-sized pieces
- 2 cups broccoli florets
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup teriyaki sauce
- Cooked rice or noodles for serving
Instructions
- Cut the boneless chicken breast into bite-sized pieces and trim any excess fat if desired.
- Heat the olive oil in a large skillet over medium heat until it shimmers.
- Season the chicken pieces with salt and pepper, then add them to the skillet in a single layer. Cook for about 5–7 minutes, turning occasionally, until golden brown and cooked through.
- Add the broccoli florets and stir-fry for 3–4 minutes until they are vibrant green and tender-crisp.
- Pour the teriyaki sauce over the chicken and broccoli, stirring to coat evenly. Let it simmer for an additional 2 minutes until the sauce thickens slightly.
- Serve the teriyaki chicken and broccoli over cooked rice or noodles. Taste and season with extra salt and pepper if needed.
Notes
For a gluten-free option, use gluten-free teriyaki sauce. Feel free to customize with additional vegetables or serve over noodles.
