Description

Delightful summer treat combining tender shortcake, fresh strawberries, and sweet glaze.


Ingredients

  • 1 ¾ cups all-purpose flour
  • ⅓ cup granulated sugar
  • 3 tablespoons packed light brown sugar
  • ¾ cup salted butter, melted
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon all-purpose flour (for the filling)
  • 3 cups chopped fresh strawberries
  • 2 tablespoons granulated sugar (for the strawberries)
  • ½ cup powdered sugar
  • 1 tablespoon light or heavy whipping cream
  • ¼ teaspoon pure vanilla extract (for the glaze)


Instructions

  1. Preheat your oven to 350°F (175°C). Prepare an 8-inch square baking pan by greasing it or lining it with parchment paper.
  2. Combine 1 ¾ cups of flour, ⅓ cup of granulated sugar, 3 tablespoons of light brown sugar, and melted butter in a mixing bowl. Stir until crumbly.
  3. Press this mixture evenly into the bottom of the prepared pan to form a crust.
  4. Combine 3 cups of chopped strawberries with 2 tablespoons of granulated sugar and 1 tablespoon of flour in another bowl. Toss until coated.
  5. Spread the strawberry mixture over the crust evenly.
  6. Bake for about 30-35 minutes, or until the fruit is bubbling and the crust is lightly golden. Allow to cool.
  7. Whisk together the powdered sugar, whipping cream, and ¼ teaspoon of vanilla extract until smooth for the glaze.
  8. Drizzle the glaze over the top of the cooled bars and let it set before cutting into squares.

Notes

For added flavor, consider serving with whipped cream or a scoop of vanilla ice cream.
