Description
Delightful Strawberry Shortcake Bars combining sweet strawberries and a buttery crumb base, perfect for summer gatherings.
Ingredients
- 1 ¾ cups all-purpose flour
- ⅓ cup granulated sugar
- 3 tablespoons packed light brown sugar
- ¾ cup salted butter, melted
- 1 teaspoon pure vanilla extract
- 3 cups chopped fresh strawberries
- 2 tablespoons granulated sugar
- 1 tablespoon all-purpose flour
- ½ cup powdered sugar
- 1 tablespoon light or heavy whipping cream
- ¼ teaspoon pure vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch square baking pan with parchment paper.
- Mix together the all-purpose flour, granulated sugar, brown sugar, and a pinch of salt in a medium bowl.
- Pour in the melted butter and vanilla extract, and stir until the mixture resembles wet sand.
- Press two-thirds of the mixture firmly into the bottom of the prepared pan and smooth the surface.
- Bake for 15-20 minutes until lightly golden.
- Combine the chopped strawberries, 2 tablespoons of granulated sugar, and 1 tablespoon of flour in another bowl.
- Spoon the strawberry mixture over the baked crust, spreading it evenly.
- Crumble the remaining crust mixture on top of the strawberries.
- Bake for an additional 30-35 minutes until bubbling and golden.
- Allow the bars to cool completely.
- Whisk together the powdered sugar, cream, and vanilla, then drizzle it over the bars.
- Cut into 12 squares and serve!
Notes
These bars can be paired with whipped cream or vanilla ice cream for an elevated dessert experience. Store leftovers in an airtight container in the refrigerator for up to 5 days.
