Description

This delightful dessert combines a light, fluffy cake with a velvety cheesecake filling bursting with fresh strawberries, perfect for celebrations or a sweet weeknight treat.


Ingredients

  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • 1/4 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced
  • Whipped cream, for serving (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a 15×10 inch jelly roll pan with parchment paper.
  2. Beat the eggs and granulated sugar together until thick and pale.
  3. Fold in the flour, baking powder, and salt, taking care not to overmix.
  4. Mix in the milk and melted butter until fully combined.
  5. Spread the batter evenly in the prepared pan and bake for 12-15 minutes until lightly golden.
  6. Prepare the cheesecake filling by beating the cream cheese, powdered sugar, and vanilla extract until smooth.
  7. Remove the cake from the oven and let it cool slightly.
  8. Turn the cake onto a clean kitchen towel dusted with powdered sugar, then carefully peel off the parchment paper.
  9. Spread the cheesecake filling over the cake, sprinkle with diced strawberries, and roll it tightly using the towel as a guide.
  10. Chill in the refrigerator for at least 1 hour before slicing.
  11. Serve with additional whipped cream if desired.

Notes

For a lighter filling, you can use whipped cream cheese. Additionally, dusting the towel with powdered sugar helps to prevent sticking when rolling.
