Description

A delightful dessert combining rich cheesecake flavors with sweet strawberries, perfect for any occasion.


Ingredients

  • 2 cups fresh strawberries (sliced; frozen can work too)
  • 1 (8 oz) package cream cheese (softened; low-fat works)
  • 1 cup granulated sugar (or coconut sugar for a lighter option)
  • 1 teaspoon vanilla extract
  • 1 box yellow cake mix (or gluten-free cake mix)
  • 1/2 cup unsalted butter (melted; coconut oil for dairy-free)
  • 1 cup milk (almond or oat milk for dairy-free)
  • 1/2 teaspoon salt
  • Powdered sugar (for dusting, optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, toss the sliced strawberries with 1/4 cup of granulated sugar and let them sit for about 10 minutes.
  3. In another bowl, beat the softened cream cheese with the remaining 3/4 cup of sugar and the vanilla extract until smooth and creamy.
  4. Combine the yellow cake mix, melted butter, milk, and salt in a large mixing bowl. Mix until just combined.
  5. Grease a 9×13-inch baking dish and pour half of the cake batter into it. Spread the cream cheese layer on top, add the marinated strawberries, then pour in the remaining cake batter.
  6. Bake for 45-50 minutes, or until golden and a toothpick inserted in the center comes out clean.
  7. Allow to cool for 10-15 minutes, then dust with powdered sugar before serving.

Notes

Serve warm or at room temperature. Great with whipped cream or a scoop of vanilla ice cream.
