A delightful dessert combining rich cheesecake flavors with sweet strawberries, perfect for any occasion.
Ingredients
- 2 cups fresh strawberries (sliced; frozen can work too)
- 1 (8 oz) package cream cheese (softened; low-fat works)
- 1 cup granulated sugar (or coconut sugar for a lighter option)
- 1 teaspoon vanilla extract
- 1 box yellow cake mix (or gluten-free cake mix)
- 1/2 cup unsalted butter (melted; coconut oil for dairy-free)
- 1 cup milk (almond or oat milk for dairy-free)
- 1/2 teaspoon salt
- Powdered sugar (for dusting, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, toss the sliced strawberries with 1/4 cup of granulated sugar and let them sit for about 10 minutes.
- In another bowl, beat the softened cream cheese with the remaining 3/4 cup of sugar and the vanilla extract until smooth and creamy.
- Combine the yellow cake mix, melted butter, milk, and salt in a large mixing bowl. Mix until just combined.
- Grease a 9×13-inch baking dish and pour half of the cake batter into it. Spread the cream cheese layer on top, add the marinated strawberries, then pour in the remaining cake batter.
- Bake for 45-50 minutes, or until golden and a toothpick inserted in the center comes out clean.
- Allow to cool for 10-15 minutes, then dust with powdered sugar before serving.
Notes
Serve warm or at room temperature. Great with whipped cream or a scoop of vanilla ice cream.
