Ingredients
- 1 pound ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups heavy cream
- 1 cup chicken broth
- 2 cups gnocchi
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup fresh basil, chopped
Instructions
- Combine ground chicken, breadcrumbs, Parmesan, egg, minced garlic, Italian seasoning, salt, and pepper in a large bowl. Mix until just combined.
- Form the mixture into evenly sized meatballs and place them in a single layer in the slow cooker.
- Whisk the heavy cream and chicken broth together and pour evenly over the meatballs.
- Scatter the gnocchi, chopped spinach, and sun-dried tomatoes over the meatballs and cream without stirring.
- Cover and cook on low for 6–8 hours or on high for 3–4 hours.
- Stir in fresh basil just before serving.
Notes
For a lighter finish, consider swapping heavy cream with half-and-half. Adjust salt based on the saltiness of Parmesan and sun-dried tomatoes.
