Ingredients

  • 2 cups grated hash browns
  • 6 eggs
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled bacon
  • 1/2 cup milk
  • Salt and pepper to taste
  • Cooking spray or oil for greasing


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or a light coating of oil.
  2. Combine the grated hash browns, eggs, milk, salt, and pepper in a large mixing bowl. Mix until fully incorporated.
  3. Fold in the shredded cheddar cheese and crumbled bacon for even distribution.
  4. Spoon the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  5. Bake for 25-30 minutes or until the tops are golden brown and the muffins have set firm.
