Description

Delicious and satisfying breakfast roll-ups made with scrambled eggs, sausage, and cheese wrapped in tortillas.


Ingredients

  • 4 large eggs
  • 1 cup cooked sausage, crumbled
  • 1 cup shredded cheese (cheddar or your choice)
  • 4 large tortillas or wraps
  • Salt and pepper to taste
  • Butter or oil for cooking


Instructions

  1. Whisk the eggs in a mixing bowl and season with salt and pepper.
  2. Heat a skillet over medium heat, adding butter or oil.
  3. Pour the whisked eggs into the skillet and scramble until just set.
  4. Fold in the crumbled sausage and shredded cheese until melted.
  5. Take a portion of the mixture and place it on each tortilla. Roll tightly.
  6. Cook the roll-ups in the skillet until golden and crispy on both sides.

Notes

Serve with salsa, guacamole, or hot sauce. Store in an airtight container in the fridge for 3-4 days or freeze for longer storage.
