Description
Ranch Style Eggs combine perfectly cooked eggs, warm black beans, and fresh avocado on crispy tortillas for a delicious breakfast or brunch.
Ingredients
- 4 large eggs
- 2 corn tortillas
- 1 cup black beans (canned or pre-cooked)
- 1/2 cup salsa
- 1 avocado, sliced
- 1/4 cup fresh cilantro, chopped
- Hot sauce (to taste)
- Olive oil
- Salt and pepper to taste
Instructions
- Heat a drizzle of olive oil in a skillet over medium heat.
- Slightly toast the corn tortillas in the same skillet until they turn golden brown. Remove them from the pan and set aside.
- Crack the eggs into the same skillet and cook them to your preferred doneness.
- Warm the black beans in the skillet or microwave until heated through.
- On a plate, place one tortilla as your base. Layer it with black beans, a fried egg, salsa, and sliced avocado.
- Garnish with fresh cilantro, drizzle with hot sauce to taste, and season with salt and pepper.
- Serve immediately and enjoy!
