Ingredients
- 1 cup fresh pineapple, diced
- 1-2 chipotle peppers in adobo sauce, minced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
Instructions
- Combine the diced pineapple, minced chipotle peppers, red onion, and cilantro in a mixing bowl.
- Squeeze fresh lime juice over the mixture, and season with salt to taste.
- Stir well to combine all ingredients.
- Allow the salsa to sit for at least 15 minutes before serving to let the flavors meld beautifully.
Notes
Store in an airtight container in the fridge for 3-5 days. Freezing is not recommended as it can alter the texture of the pineapple.
