Description

A vibrant celebration of flavors combining tender marinated pork, juicy pineapple, and crisp vegetables, perfect for outdoor gatherings.

Ingredients

  • 1 pound pork tenderloin, cut into 1-inch cubes
  • 1 fresh pineapple, cut into 1-inch chunks
  • 1 red onion, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1/2 cup BBQ sauce
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your grill to medium heat.
  2. Combine the pork, pineapple, red onion, and green bell pepper in a large mixing bowl.
  3. Whisk together the BBQ sauce, olive oil, soy sauce, garlic powder, and black pepper in a separate small bowl.
  4. Pour the BBQ sauce mixture over the pork and vegetables, tossing well to coat evenly.
  5. Thread the marinated pork and veggies onto skewers, alternating for visual appeal.
  6. Place the skewers on the hot grill and cook for about 15-20 minutes, turning occasionally until the pork is cooked through and the veggies are tender.
  7. Brush with any remaining BBQ sauce during the last few minutes of grilling for extra flavor.
  8. Serve hot off the grill with your favorite sides.

Notes

For best results, marinate the meat for at least 30 minutes, and consider using metal skewers for easier grilling.
