Indulge in the rich, fudgy goodness of brownies with a luscious peanut butter filling in every bite.
Ingredients
- 3/4 cup smooth peanut butter
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter
- 6 ounces semi-sweet chocolate
- 1 cup granulated sugar
- 2 large eggs
- 1 large egg yolk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (180°C). Prepare an 8×8 inch pan by lining it with parchment paper and lightly greasing it.
- Combine the peanut butter, powdered sugar, and 1 teaspoon of vanilla extract. Mix until creamy and set aside.
- Melt the unsalted butter and semi-sweet chocolate together over simmering water until smooth. Allow it to cool slightly.
- Whisk the granulated sugar into the melted chocolate mixture. Beat in the eggs and an additional egg yolk, followed by another teaspoon of vanilla extract.
- Sift together the flour, cocoa powder, and salt in another bowl. Gradually fold this dry mixture into the chocolate mixture until just combined.
- Spread half of the brownie batter into the pan. Scoop the peanut butter filling over the batter, spreading it to the edges. Pour the remaining brownie batter on top and smooth it out.
- Bake for 25-30 minutes, until the edges look set and a toothpick inserted comes out with moist crumbs.
- Allow to cool completely in the pan before lifting out and cutting into squares.
Notes
For added flavor, consider substituting almond butter for peanut butter or adding dark chocolate chips to the brownie batter.
