A comforting one-pot dish featuring creamy gnocchi, tender chicken, and vegetables, perfect for weeknights.


Ingredients

  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 pound gnocchi (fresh or packaged)
  • 1 tablespoon cornstarch (optional, for thickening)
  • Fresh parsley, for garnish (optional)


Instructions

  1. Heat 1 tablespoon olive oil in a large pot over medium heat. Add the diced chicken and brown for 5–7 minutes until lightly golden and mostly cooked through. Remove the chicken and set aside.
  2. In the same pot, add chopped onion, minced garlic, diced carrots, and diced celery. Sauté for 4–5 minutes until the vegetables are tender-crisp.
  3. Stir in dried thyme, dried parsley, salt, and black pepper. Toast the dried herbs for about 30 seconds.
  4. Pour in chicken broth and heavy cream. Bring the mixture to a gentle boil over medium heat.
  5. Add gnocchi to the pot and cook for 3–5 minutes until they float to the surface. If the sauce looks too thin, mix cornstarch with cold water and stir into the sauce.
  6. Stir the cooked chicken and frozen peas into the pot. Heat through until the peas are warmed and chicken is fully cooked. Adjust seasoning and serve hot, garnished with fresh parsley if desired.
