Description
A creamy, spicy one-pot dinner featuring tender chicken, Cajun spices, and orzo pasta cooked right in the sauce for a quick and flavorful meal.
Ingredients
- 1 lb chicken, diced
- 1 tbsp Cajun seasoning
- 1 tsp smoked paprika
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp olive oil
- 2 tbsp butter
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup Parmesan cheese, freshly grated
- 1 tbsp fresh parsley, chopped
Instructions
- Toss diced chicken with Cajun seasoning and smoked paprika.
- Heat olive oil in a large skillet over medium-high heat and add the chicken.
- Brown the chicken until golden and cooked through, about 4–6 minutes.
- Remove chicken and set aside.
- Lower heat to medium and add butter to the same pan.
- Sauté chopped onion until translucent, about 4 minutes. Add garlic and cook until fragrant.
- Add orzo to the pan and stir for 1–2 minutes.
- Pour in the chicken broth and bring to a simmer.
- Cover and simmer gently for 8–10 minutes, stirring occasionally.
- Reduce heat to low and stir in heavy cream and Parmesan.
- Check seasoning and adjust as needed.
- Serve immediately, garnished with parsley.
Notes
Best served warm with a sprinkle of Parmesan and parsley. For added richness, drizzle a little olive oil or add a pat of butter before serving.
