A creamy, comforting one-pan dish that combines rich flavors of shrimp and orzo, perfect for busy weeknights or special gatherings.
Ingredients
- 1 pound Orzo Pasta
- 1.5 pounds Shrimp, peeled and deveined
- 4 cups Chicken Broth
- ½ cup White Wine (optional)
- 1 medium Yellow Onion, diced
- 4 cloves Garlic, minced
- 1 cup Parmesan Cheese, grated, plus extra for serving
- ½ cup Heavy Cream
- 2 tablespoons Unsalted Butter
- 2 tablespoons Olive Oil
- 1 Lemon, juiced and zested
- ¼ cup Fresh Parsley, chopped
- ¼ teaspoon Red Pepper Flakes (optional)
- Salt and Black Pepper, to taste
Instructions
- In a large oven-safe skillet or Dutch oven over medium heat, combine olive oil and butter. Add the diced onion and cook until softened (about 5 minutes). Stir in the minced garlic and red pepper flakes, cooking for an additional minute until fragrant.
- Toss in the orzo and toast for 1-2 minutes. If using white wine, pour it in now, scraping any flavorful bits from the skillet.
- Add the chicken broth, lemon zest, salt, and pepper. Bring to a boil, then lower the temperature, cover, and let it simmer for 10-12 minutes.
- Stir in the shrimp, nestling them into the orzo. Cover again, cooking for another 3-5 minutes until the shrimp are pink and fully cooked.
- Remove from heat and mix in the grated Parmesan and heavy cream until combined and creamy.
- Add freshly squeezed lemon juice and chopped parsley, adjusting salt and pepper to taste.
- Serve hot, garnished with extra Parmesan and parsley if desired.
Notes
Ensure shrimp are dry before cooking for optimal browning. Substitute shrimp with chicken or veggies for variety.
