Description

A creamy, comforting one-pan dish that combines rich flavors of shrimp and orzo, perfect for busy weeknights or special gatherings.


Ingredients

  • 1 pound Orzo Pasta
  • 1.5 pounds Shrimp, peeled and deveined
  • 4 cups Chicken Broth
  • ½ cup White Wine (optional)
  • 1 medium Yellow Onion, diced
  • 4 cloves Garlic, minced
  • 1 cup Parmesan Cheese, grated, plus extra for serving
  • ½ cup Heavy Cream
  • 2 tablespoons Unsalted Butter
  • 2 tablespoons Olive Oil
  • 1 Lemon, juiced and zested
  • ¼ cup Fresh Parsley, chopped
  • ¼ teaspoon Red Pepper Flakes (optional)
  • Salt and Black Pepper, to taste


Instructions

  1. In a large oven-safe skillet or Dutch oven over medium heat, combine olive oil and butter. Add the diced onion and cook until softened (about 5 minutes). Stir in the minced garlic and red pepper flakes, cooking for an additional minute until fragrant.
  2. Toss in the orzo and toast for 1-2 minutes. If using white wine, pour it in now, scraping any flavorful bits from the skillet.
  3. Add the chicken broth, lemon zest, salt, and pepper. Bring to a boil, then lower the temperature, cover, and let it simmer for 10-12 minutes.
  4. Stir in the shrimp, nestling them into the orzo. Cover again, cooking for another 3-5 minutes until the shrimp are pink and fully cooked.
  5. Remove from heat and mix in the grated Parmesan and heavy cream until combined and creamy.
  6. Add freshly squeezed lemon juice and chopped parsley, adjusting salt and pepper to taste.
  7. Serve hot, garnished with extra Parmesan and parsley if desired.

Ensure shrimp are dry before cooking for optimal browning. Substitute shrimp with chicken or veggies for variety.
