A quick and delicious dinner option featuring tender chicken breasts marinated in balsamic vinegar, accompanied by vibrant cherry tomatoes and fresh spinach.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cherry tomatoes
  • 1 cup spinach
  • Fresh basil for garnish


Instructions

  1. In a large mixing bowl, whisk together the balsamic vinegar, olive oil, minced garlic, dried oregano, salt, and pepper until well combined.
  2. Add the chicken breasts into the bowl, ensuring they’re well coated with the marinade. Let them sit for at least 15 minutes to absorb those flavors.
  3. Heat a large skillet over medium heat. When hot, add the marinated chicken.
  4. Cook the chicken for 5-7 minutes on each side until cooked through and no longer pink in the middle.
  5. In the final 2-3 minutes of cooking, toss in the cherry tomatoes and spinach. Stir gently until the tomatoes soften and the spinach wilts.
  6. Finish with a sprinkle of fresh basil before plating and serving.

Notes

For a vegetarian twist, substitute chicken with tofu. Marinating the chicken overnight enhances the flavor.
