Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup balsamic vinegar
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup cherry tomatoes
- 1 cup spinach
- Fresh basil for garnish
Instructions
- In a large mixing bowl, whisk together the balsamic vinegar, olive oil, minced garlic, dried oregano, salt, and pepper until well combined.
- Add the chicken breasts into the bowl, ensuring they’re well coated with the marinade. Let them sit for at least 15 minutes to absorb those flavors.
- Heat a large skillet over medium heat. When hot, add the marinated chicken.
- Cook the chicken for 5-7 minutes on each side until cooked through and no longer pink in the middle.
- In the final 2-3 minutes of cooking, toss in the cherry tomatoes and spinach. Stir gently until the tomatoes soften and the spinach wilts.
- Finish with a sprinkle of fresh basil before plating and serving.
Notes
For a vegetarian twist, substitute chicken with tofu. Marinating the chicken overnight enhances the flavor.
