Quick and healthy energy bites perfect for snacks or a pre-workout boost.
Ingredients
- 1 1/2 cups old-fashioned oats
- 1/2 cup creamy peanut butter (melted)
- 1/4 cup mini chocolate chips
- 1/4 cup honey (melted)
- 1/4 tsp ground cinnamon
- 1/4 tsp vanilla extract
Instructions
- In a large mixing bowl, combine the old-fashioned oats, melted peanut butter, mini chocolate chips, melted honey, ground cinnamon, and vanilla extract.
- Mix well until all ingredients are thoroughly combined.
- Using a mini ice cream scoop or your hands, roll the mixture into approximately 15 bite-sized balls.
- Place the energy bites on a tray and refrigerate until they firm up, ideally for at least 30 minutes.
- Once set, they’re ready to be enjoyed or stored for later!
Notes
Store in an airtight container in the refrigerator for up to one week, or freeze for several months.
