Description

A festive no-bake pie bursting with red, white, and blue colors from mixed berries, perfect for summer gatherings.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (such as strawberries, blueberries, and raspberries)
  • 1/4 cup sugar (for the berry swirl)


Instructions

  1. Combine graham cracker crumbs and melted butter in a medium bowl, mixing until fully incorporated. Press into a pie dish and refrigerate for about 30 minutes to set.
  2. Beat the softened cream cheese with the powdered sugar until smooth and creamy.
  3. Whip the heavy cream and vanilla extract in a separate bowl to stiff peaks.
  4. Fold the whipped cream into the cream cheese mixture until no streaks remain.
  5. Blend the mixed berries with sugar until a smooth puree forms.
  6. Pour half of the cheesecake filling into the crust, drizzle with some berry puree, and swirl gently. Repeat with remaining filling and berry puree.
  7. Cover the pie and refrigerate for at least 240 minutes or until fully set.
  8. Serve chilled and enjoy!

Notes

Best served with additional fresh berries or whipped cream. Can be made a day in advance.
