A festive no-bake pie bursting with red, white, and blue colors from mixed berries, perfect for summer gatherings.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup cream cheese, softened
- 1 cup powdered sugar
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 1 cup mixed berries (such as strawberries, blueberries, and raspberries)
- 1/4 cup sugar (for the berry swirl)
Instructions
- Combine graham cracker crumbs and melted butter in a medium bowl, mixing until fully incorporated. Press into a pie dish and refrigerate for about 30 minutes to set.
- Beat the softened cream cheese with the powdered sugar until smooth and creamy.
- Whip the heavy cream and vanilla extract in a separate bowl to stiff peaks.
- Fold the whipped cream into the cream cheese mixture until no streaks remain.
- Blend the mixed berries with sugar until a smooth puree forms.
- Pour half of the cheesecake filling into the crust, drizzle with some berry puree, and swirl gently. Repeat with remaining filling and berry puree.
- Cover the pie and refrigerate for at least 240 minutes or until fully set.
- Serve chilled and enjoy!
Notes
Best served with additional fresh berries or whipped cream. Can be made a day in advance.
