Ingredients
- 1 tart shell (regular or gluten-free)
- 3 large eggs, separated
- 1 cup granulated sugar
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1/4 cup cornstarch
- 1 cup water
- 1/4 teaspoon cream of tartar
- Butter (for greasing the tart shell, optional)
Instructions
- Preheat your oven to 350°F (175°C). Place your tart shell in the oven and bake it until it achieves a lovely golden brown color.
- In a medium saucepan, whisk together the granulated sugar, cornstarch, and water. Cook this mixture over medium heat, stirring continuously, until it thickens to a pudding-like consistency.
- In a separate bowl, combine the lemon juice and egg yolks. Slowly stir this mixture into the saucepan, continuing to cook for another 2-3 minutes until it thickens further.
- Remove the saucepan from heat and mix in the lemon zest. Pour this glorious filling into the prepared tart shell.
- In a clean bowl, beat the egg whites alongside the cream of tartar until soft peaks begin to form. Gradually add in the remaining sugar, continuing until stiff peaks develop.
- Gently spread the meringue over the lemon filling, ensuring the edges get sealed well to keep everything together.
- Bake the tartlet for 10-15 minutes, or until the meringue takes on a beautiful golden hue.
- Allow the tartlet to cool fully before indulging.
Notes
For the best meringue, ensure your mixing bowl and beaters are completely clean and free of grease. Add sugar gradually for a sweeter meringue.
