Description

A tropical grilled chicken dish marinated in a delightful blend of citrus and pineapple juices, perfect for summer evenings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 1 lime
  • Juice of 1 orange
  • 1/2 cup pineapple juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh cilantro, chopped
  • Salt and pepper to taste


Instructions

  1. Whisk together the olive oil, lime juice, orange juice, pineapple juice, minced garlic, cilantro, salt, and pepper until well blended.
  2. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 60 minutes.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade, discarding any leftover marinade.
  5. Grill the chicken for 6-7 minutes on each side, or until fully cooked and the juices run clear.
  6. Let the chicken rest for a few minutes before serving to lock in the juices.

Notes

Marinating overnight allows for deeper flavor. Grill on a hot surface to achieve a good sear.
