Description
A tropical grilled chicken dish marinated in a delightful blend of citrus and pineapple juices, perfect for summer evenings.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- Juice of 1 lime
- Juice of 1 orange
- 1/2 cup pineapple juice
- 2 cloves garlic, minced
- 1 tablespoon fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Whisk together the olive oil, lime juice, orange juice, pineapple juice, minced garlic, cilantro, salt, and pepper until well blended.
- Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 60 minutes.
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade, discarding any leftover marinade.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked and the juices run clear.
- Let the chicken rest for a few minutes before serving to lock in the juices.
Notes
Marinating overnight allows for deeper flavor. Grill on a hot surface to achieve a good sear.
