Ingredients
- 8 large eggs
- 1/4 cup milk
- Salt and pepper to taste
- 8 pre-cooked breakfast sausage links
- 8 (8-inch) flour tortillas
- 1 cup shredded cheddar cheese
- 1 tablespoon butter
- Non-stick cooking spray
Instructions
- Crack the eggs into a large bowl and whisk in the milk, salt, and pepper until well-blended and frothy.
- Melt the butter in a non-stick skillet over medium heat. Pour in the egg mixture, gently stirring until soft and fluffy, about 5-7 minutes. Remove from heat.
- Lightly toast the tortillas in a skillet or microwave.
- Lay a warm tortilla on a flat surface. Place a sausage link at one edge, add scrambled eggs, and sprinkle with cheddar cheese.
- Tightly roll the tortilla, folding in the ends to seal.
- Wipe the skillet clean, spray with non-stick cooking spray, and heat to medium. Place roll-ups seam side down and cook until golden brown, 2-3 minutes per side.
- Serve hot with salsa or hot sauce if desired.
Notes
