Ingredients
- 1.5 cups all-purpose flour
- 0.5 cups granulated sugar
- 1 tablespoon baking powder
- 0.5 teaspoons salt
- 1 teaspoon ground cinnamon
- 1 large egg, beaten
- 0.33 cups vegetable oil
- 0.5 cups milk
- 1 cup peeled and diced apples (Granny Smith or Honeycrisp recommended)
- 1 tablespoon cinnamon sugar (1 tablespoon sugar mixed with ½ teaspoon cinnamon)
Instructions
- Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners or lightly grease it.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and ground cinnamon until everything is well combined.
- In a separate bowl, mix the beaten egg, vegetable oil, and milk until smooth.
- Pour the wet ingredients into the dry ones and stir gently just until combined.
- Carefully fold in the diced apples, distributing them evenly throughout the batter.
- Spoon the mixture into the muffin tin, filling each cup about three-quarters full.
- Sprinkle cinnamon sugar on top.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Let them cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.
Notes
For extra flavor, squeeze a bit of lemon juice over the diced apples. Store in an airtight container for up to three days.
