Description

Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cups granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1 large egg, beaten
  • 0.33 cups vegetable oil
  • 0.5 cups milk
  • 1 cup peeled and diced apples (Granny Smith or Honeycrisp recommended)
  • 1 tablespoon cinnamon sugar (1 tablespoon sugar mixed with ½ teaspoon cinnamon)


Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners or lightly grease it.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and ground cinnamon until everything is well combined.
  3. In a separate bowl, mix the beaten egg, vegetable oil, and milk until smooth.
  4. Pour the wet ingredients into the dry ones and stir gently just until combined.
  5. Carefully fold in the diced apples, distributing them evenly throughout the batter.
  6. Spoon the mixture into the muffin tin, filling each cup about three-quarters full.
  7. Sprinkle cinnamon sugar on top.
  8. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let them cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra flavor, squeeze a bit of lemon juice over the diced apples. Store in an airtight container for up to three days.
