Ingredients
- 12 large eggs
- 2 cups whole milk
- 2 cups shredded sharp cheddar cheese
- 1 cup diced ham or cooked sausage
- 1 cup chopped spinach (fresh or thawed)
- 1 red bell pepper (diced)
- 1 small onion (finely chopped)
- 1 cup biscuit mix (like Bisquick or flour)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon nutmeg (optional)
- Butter or oil for greasing
Instructions
- Preheat your oven to 350°F (175°C) and grease a large baking dish with butter or oil.
- Sauté the chopped onion and diced red bell pepper in a skillet over medium heat until tender and slightly caramelized.
- Beat the eggs in a large bowl and mix in the milk, salt, black pepper, garlic powder, and nutmeg until well combined.
- Add the biscuit mix into the egg mixture gradually, stirring until just combined.
- Fold in the sautéed vegetables, chopped spinach, cheese, and diced ham (or sausage).
- Pour the mixture into your prepared baking dish and bake for about 45 minutes or until the top is golden brown and set.
Notes
