Ingredients

  • 1 cup cottage cheese (small-curd recommended)
  • 1 cup rolled oats
  • 2 large eggs
  • 1/4 cup maple syrup or honey (adjust to taste)
  • 1 lemon — zest and juice
  • 1 cup blueberries (fresh or frozen)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt


Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch (or similar) baking dish.
  2. Combine the cottage cheese, rolled oats, eggs, maple syrup (or honey), lemon juice, and lemon zest in a large bowl. Stir until mostly smooth.
  3. Fold in the blueberries, baking powder, vanilla extract, and a pinch of salt. Gently mix to avoid smashing all the berries.
  4. Pour the mixture into the prepared baking dish and smooth the top with a spatula.
  5. Bake for 30–35 minutes, until the top is set and edges are slightly golden.
  6. Allow the bake to cool for about 10 minutes before slicing. Serve warm or let cool completely.

Notes

For a smoother texture, blend the cottage cheese briefly before mixing. Adjust sweetness to taste before baking.
