Description
A satisfying bowl of crispy garlic chicken fried rice packed with protein and umami flavor, perfect for a quick weeknight dinner.
Ingredients
- 1 cup jasmine rice
- 2 tablespoons vegetable oil, divided
- 3 large eggs, beaten
- 1 pound boneless, skinless chicken breast, diced
- Salt and black pepper, to taste
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon fish sauce
- 4 cloves garlic, minced
- 1 tablespoon sesame oil
- 1 cup mixed vegetables (such as peas, carrots, and corn)
- 2 green onions, chopped
- 1 tablespoon chopped fresh cilantro, for garnish
Instructions
- Cook jasmine rice according to package instructions. Once cooked, spread the rice in a thin layer on a baking sheet or large plate to cool and dry.
- Heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add the beaten eggs and scramble until just set. Transfer the eggs to a plate and set aside.
- Add the remaining 1 tablespoon of oil over medium-high heat. Add the diced chicken, season with salt and black pepper, and cook until browned on the outside and cooked through.
- Add the minced garlic and mixed vegetables to the pan. Stir-fry just until fragrant and the vegetables look bright and heated through.
- Fold the cooled rice into the pan along with the sauces. Toss thoroughly to combine and continue stirring until the rice develops slight crispiness at the edges.
- Finish by folding in the scrambled eggs and green onions. Drizzle the sesame oil over everything, stir to combine, and serve garnished with cilantro.
Notes
For best results, use cooled jasmine rice. Adjust sauce seasoning to taste.
