Description

A delicious and protein-packed creamy beef pasta dish made with fettuccine and a rich sauce.

Ingredients

  • 8 oz fettuccine pasta
  • 1 lb lean ground beef
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions until al dente. Drain, and reserve about 1 cup of pasta water.
  2. In a large skillet over medium heat, add the ground beef. Brown it while breaking it into small pieces, seasoning with salt and pepper as it cooks.
  3. Once the beef is fully cooked, push it to one side of the skillet. Add in the minced garlic, sautéing it for about a minute until it’s fragrant.
  4. Pour in the heavy cream and gradually stir in the Parmesan cheese until the sauce is smooth and creamy.
  5. Toss in the fresh spinach and let it wilt down into the sauce, scraping any flavorful bits from the bottom of the skillet.
  6. Combine the cooked fettuccine with the creamy beef mixture. If the sauce is too thick, add some of the reserved pasta water until you reach your desired consistency. Serve hot and enjoy!

Notes

For a lighter option, consider using ground turkey or chicken, or non-dairy cream for those avoiding dairy.
