Description
These savory cottage cheese flatbreads are quick to make and high in protein, perfect for meals or snacks.
Ingredients
- 1 cup cottage cheese
- 1 cup flour (whole wheat or almond flour)
- 2 large eggs
- 1 teaspoon baking powder
- Salt, to taste (start with 1/4 teaspoon)
- Pepper, to taste
- Cooking oil or non-stick spray for frying
Instructions
- Combine cottage cheese, flour, eggs, baking powder, salt, and pepper in a medium bowl until a thick dough forms.
- Divide the dough into 4 equal portions for large flatbreads, or 6–8 for smaller rounds.
- Roll each portion into a flat circle about 1/4-inch thick.
- Heat a non-stick skillet over medium heat and add oil or coat with non-stick spray.
- Cook one flatbread for 2–3 minutes until golden, then flip and cook another 2–3 minutes.
- Transfer to a cooling rack or plate and let rest before serving.
Notes
For dairy-free diets, there isn’t a direct swap for cottage cheese. Can refrigerate dough for up to 24 hours before cooking.
