Description

A guilt-free twist on the classic Ohio favorite, blending creamy peanut butter with rich dark chocolate for a delicious treat.

Ingredients

  • 1 cup natural peanut butter
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 1 1/2 cups dark chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. In a mixing bowl, combine the natural peanut butter, maple syrup, and vanilla extract. Stir until smooth and creamy.
  2. Gradually incorporate the powdered sugar, mixing until it’s fully blended into the peanut butter mixture.
  3. Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
  4. Freeze the balls for about 30 minutes to help them firm up.
  5. Melt the dark chocolate chips with coconut oil in a microwave-safe bowl, stirring until smooth.
  6. Dip each peanut butter ball into the melted chocolate, letting the excess drip off before placing it back on the baking sheet.
  7. Put the dipped balls back in the refrigerator until the chocolate sets.
  8. Enjoy your deliciously healthy buckeyes!

Notes

Use drippy peanut butter for a smoother texture. Store in an airtight container for up to two weeks.
