Description

A vibrant grilled shrimp bowl served over fresh corn salsa, perfect for summer nights and quick weeknight dinners.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 avocado, diced
  • 1 cup corn, cooked (fresh, canned, or frozen)
  • 1/2 red onion, diced
  • 1 cup cherry tomatoes, halved
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh cilantro for garnish


Instructions

  1. Preheat the grill to medium-high heat.
  2. Toss shrimp with olive oil, lime juice, salt, and pepper.
  3. Grill shrimp for 2-3 minutes on each side until pink and opaque.
  4. Mix corn, avocado, red onion, cherry tomatoes, and cilantro in a bowl.
  5. Serve grilled shrimp over corn salsa and garnish with cilantro.

Notes

For a kick, add diced jalapeño to the salsa or swap shrimp for grilled chicken or tofu.
