Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 avocado, diced
- 1 cup corn kernels (fresh or frozen)
- 1 small red onion, finely chopped
- ½ cup cherry tomatoes, halved
- ½ cup Greek yogurt
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Juice of 1 lime
- Salt and pepper, to taste
- Fresh cilantro, for garnish (optional)
Instructions
- In a bowl, combine the shrimp, olive oil, lime juice, salt, and pepper. Allow to marinate for about 10 minutes.
- In a separate bowl, mix the corn, red onion, cherry tomatoes, avocado, and cilantro. Squeeze lime juice over and season with salt and pepper. Stir gently to combine.
- In a small bowl, mix Greek yogurt, minced garlic, and a pinch of salt. Adjust the consistency with water if needed.
- Preheat the grill to medium-high heat and grill the marinated shrimp for about 2-3 minutes on each side until pink and opaque.
- In a serving dish, layer the grilled shrimp, corn salsa, and drizzle with creamy garlic sauce. Garnish with extra cilantro if desired.
- Serve immediately and enjoy!
