Description

A flavorful grilled shrimp bowl featuring succulent shrimp, creamy avocado, a vibrant corn salsa, and a delicious garlic sauce. Perfect for any occasion!


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 avocado, diced
  • 1 cup corn kernels (fresh or frozen)
  • 1 small red onion, finely chopped
  • ½ cup cherry tomatoes, halved
  • ½ cup Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Juice of 1 lime
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish (optional)


Instructions

  1. In a bowl, combine the shrimp, olive oil, lime juice, salt, and pepper. Allow to marinate for about 10 minutes.
  2. In a separate bowl, mix the corn, red onion, cherry tomatoes, avocado, and cilantro. Squeeze lime juice over and season with salt and pepper. Stir gently to combine.
  3. In a small bowl, mix Greek yogurt, minced garlic, and a pinch of salt. Adjust the consistency with water if needed.
  4. Preheat the grill to medium-high heat and grill the marinated shrimp for about 2-3 minutes on each side until pink and opaque.
  5. In a serving dish, layer the grilled shrimp, corn salsa, and drizzle with creamy garlic sauce. Garnish with extra cilantro if desired.
  6. Serve immediately and enjoy!
