Description
A moist and flavorful banana bread enhanced with Greek yogurt, perfect for breakfast or a snack.
Ingredients
- 3 ripe bananas, mashed
- 1 cup Greek yogurt (plain)
- 1/3 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon cinnamon (optional)
- 1/2 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large mixing bowl, combine the mashed bananas, Greek yogurt, honey (or maple syrup), eggs, and vanilla extract. Mix until everything is well incorporated.
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and optional cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. If you want to include nuts or chocolate chips, fold them in at this stage.
- Pour the batter into your prepared loaf pan and smooth out the top with a spatula.
- Bake for 50-60 minutes. Check for doneness by inserting a toothpick in the center; it should come out clean.
- Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Use very ripe bananas for the best sweetness and flavor. Don’t overmix the batter for a light, fluffy texture.
