Description

A moist and flavorful banana bread enhanced with Greek yogurt, perfect for breakfast or a snack.


Ingredients

  • 3 ripe bananas, mashed
  • 1 cup Greek yogurt (plain)
  • 1/3 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup chopped nuts or chocolate chips (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, combine the mashed bananas, Greek yogurt, honey (or maple syrup), eggs, and vanilla extract. Mix until everything is well incorporated.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and optional cinnamon.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. If you want to include nuts or chocolate chips, fold them in at this stage.
  5. Pour the batter into your prepared loaf pan and smooth out the top with a spatula.
  6. Bake for 50-60 minutes. Check for doneness by inserting a toothpick in the center; it should come out clean.
  7. Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Use very ripe bananas for the best sweetness and flavor. Don’t overmix the batter for a light, fluffy texture.
