Ingredients

  • 1 pie crust (store-bought or homemade)
  • 1 cup mixed fresh vegetables (bell peppers, spinach, onions, or mushrooms)
  • 4 large eggs
  • 1 cup milk (dairy or plant-based)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil or butter in a skillet over medium heat. Add your mixed vegetables and sauté until they’re tender, about 5-7 minutes.
