Ingredients
- 1 pie crust (store-bought or homemade)
- 1 cup mixed fresh vegetables (bell peppers, spinach, onions, or mushrooms)
- 4 large eggs
- 1 cup milk (dairy or plant-based)
- 1 cup shredded cheese (cheddar or mozzarella)
- Salt and pepper to taste
- 1 tablespoon olive oil or butter
Instructions
- Preheat your oven to 375°F (190°C).
- Heat the olive oil or butter in a skillet over medium heat. Add your mixed vegetables and sauté until they’re tender, about 5-7 minutes.
- Whisk together the eggs, milk, salt, and pepper in a large bowl until well combined.
