Description

A cozy one-pan dinner featuring crispy air-fried potatoes and tender chicken coated in a garlic Parmesan sauce.


Ingredients

  • 2 boneless skinless chicken breasts, cut into small cubes
  • 45 small to medium potatoes, washed, peeled if desired, and cubed
  • Olive oil (for tossing potatoes)
  • Salt and black pepper
  • Garlic powder (for potatoes)
  • Paprika (for potatoes and chicken)
  • 2 tablespoons unsalted butter (for chicken)
  • ½ teaspoon salt and ½ teaspoon pepper (for chicken seasoning)
  • 1 teaspoon paprika, 1 teaspoon onion powder, 1 teaspoon Italian seasoning (for chicken)
  • 2 tablespoons minced garlic (fresh recommended)
  • Buffalo Wild Wings Garlic Parmesan Sauce (use to taste)
  • 1 cup shredded mozzarella cheese


Instructions

  1. Prepare potatoes: Wash (and peel, if you like) the potatoes. Cut into small, even cubes so they cook uniformly. Toss the cubes with a good drizzle of olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
  2. Air-fry potatoes: Preheat your air fryer to 400°F. Spread potatoes in a single layer (work in batches if needed). Cook ~20 minutes, shaking the basket a couple of times so they brown evenly.
  3. Season chicken: Cube the chicken while potatoes cook. In a bowl, mix chicken with ½ tsp salt, ½ tsp pepper, 1 tsp paprika, 1 tsp onion powder, and 1 tsp Italian seasoning.
  4. Cook chicken: Heat 2 tablespoons butter in a large skillet over medium-high heat. Add the chicken cubes in a single layer and sear until no pink remains and internal temperature reaches 165°F.
  5. Add garlic and sauce: Stir in the 2 tablespoons minced garlic and pour in Buffalo Wild Wings Garlic Parmesan Sauce to taste. Cook 1–2 minutes so the garlic softens and the sauce warms.
  6. Combine and cheese: Transfer the air-fried potatoes into the skillet. Toss gently to coat the potatoes with sauce. Sprinkle 1 cup shredded mozzarella on top. Cover the skillet until cheese melts or place under the broiler until bubbly and lightly browned.
  7. Rest and serve: Let the skillet rest 2–3 minutes off the heat before serving.

Notes

Can swap potatoes for Yukon Gold or red potatoes. Use dairy-free cheese for a dairy-free version. For extra Parmesan flavor, add grated Parmesan to the cheese topping.
