Ingredients
- 4 chicken breasts
- 1.5 lbs baby potatoes
- 1/4 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- In a mixing bowl, combine the grated Parmesan cheese, minced garlic, Italian seasoning, salt, pepper, and olive oil.
- Coat the chicken breasts well with this flavorful mixture.
- Place the chicken breasts in your slow cooker.
- Arrange the baby potatoes around the chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked and the potatoes are tender.
- Garnish with fresh parsley before serving.
Notes
For a crispy finish, broil the cooked chicken for a couple of minutes before serving. Optionally, add crushed red pepper flakes for some heat.
