Description

A delightful summer dessert featuring warm, juicy strawberries enveloped in a buttery crust.

Ingredients

  • 4 cups fresh strawberries, sliced
  • 3/4 cup sugar
  • 1 cup all-purpose flour (divided use)
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) melted butter
  • 3/4 cup milk (whole or low-fat)
  • 1 tablespoon lemon juice (optional)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 375°F (190°C), and lightly grease a baking dish.
  2. Combine the sliced strawberries with 1/4 cup of sugar, lemon juice, and 1 tablespoon of flour. Allow this mixture to sit for about 10 minutes to release the juices.
  3. Whisk together the remaining flour, baking powder, salt, and sugar in another bowl.
  4. Pour in the melted butter and milk, stirring until smooth.
  5. Pour the batter into the greased baking dish, then spoon the strawberry mixture evenly over the top.
  6. Bake for 35-40 minutes or until the cobbler is golden brown and the edges are bubbling.
  7. Let it cool for 15 minutes before serving warm, optionally with ice cream or whipped cream.

Notes

Serve warm with a scoop of vanilla ice cream for a delightful contrast. Store leftovers in an airtight container for up to three days.
