Ingredients
- 2 cups cooked rice
- 2 cups cooked chicken, shredded
- 1 cup French onion soup
- 1 cup sautéed onions
- 1/2 cup sour cream
- Salt and pepper to taste
- 1 tablespoon olive oil (for greasing or finishing)
- 1 cup shredded cheese (e.g., Swiss or mozzarella)
- Chopped parsley for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Combine 2 cups cooked rice, 2 cups shredded cooked chicken, 1 cup French onion soup, half of the shredded cheese, 1 cup sautéed onions, and 1/2 cup sour cream in a large mixing bowl. Season with salt and pepper to taste and mix until evenly combined.
- Grease a baking dish with olive oil and transfer the mixture into the dish, spreading it into an even layer.
- Sprinkle the remaining cheese evenly over the top of the casserole.
- Bake in the preheated oven for 25–30 minutes, or until bubbly and golden.
- Remove from the oven and let rest for 5 minutes. Garnish with chopped parsley before serving.
