Ingredients

  • 2 cups cooked rice
  • 2 cups cooked chicken, shredded
  • 1 cup French onion soup
  • 1 cup sautéed onions
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for greasing or finishing)
  • 1 cup shredded cheese (e.g., Swiss or mozzarella)
  • Chopped parsley for garnish


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine 2 cups cooked rice, 2 cups shredded cooked chicken, 1 cup French onion soup, half of the shredded cheese, 1 cup sautéed onions, and 1/2 cup sour cream in a large mixing bowl. Season with salt and pepper to taste and mix until evenly combined.
  3. Grease a baking dish with olive oil and transfer the mixture into the dish, spreading it into an even layer.
  4. Sprinkle the remaining cheese evenly over the top of the casserole.
  5. Bake in the preheated oven for 25–30 minutes, or until bubbly and golden.
  6. Remove from the oven and let rest for 5 minutes. Garnish with chopped parsley before serving.
