Delightful carrot cake bars that capture the essence of spring with spiced flavors and creamy frosting.


Ingredients

  • 2 cups grated carrots
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup applesauce
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins (optional)
  • Cream cheese frosting for topping


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Mix the grated carrots, granulated sugar, brown sugar, vegetable oil, applesauce, and eggs in a large mixing bowl until thoroughly blended.
  3. Prep the dry ingredients by whisking together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt in another bowl.
  4. Combine the dry mixture into the wet mixture, stirring gently until just combined, adding nuts or raisins if desired.
  5. Pour the batter evenly into the prepared pan.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool completely before spreading cream cheese frosting on top.
