Ingredients
- 2 cups grated carrots
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup vegetable oil
- 1/4 cup applesauce
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup chopped walnuts or pecans (optional)
- 1/2 cup raisins (optional)
- Cream cheese frosting for topping
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Mix the grated carrots, granulated sugar, brown sugar, vegetable oil, applesauce, and eggs in a large mixing bowl until thoroughly blended.
- Prep the dry ingredients by whisking together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt in another bowl.
- Combine the dry mixture into the wet mixture, stirring gently until just combined, adding nuts or raisins if desired.
- Pour the batter evenly into the prepared pan.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool completely before spreading cream cheese frosting on top.
Notes
For best flavor and texture, use freshly grated carrots. Consider adding grated ginger for an extra zing.
