Ingredients

  • 2 tablespoons olive oil (Extra virgin preferred)
  • 3 cloves garlic, minced
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper
  • 1 lb chicken tenders, trimmed
  • Fresh parsley, chopped (for serving)
  • Lemon wedges (for serving)


Instructions

  1. Make the marinade by whisking together olive oil, minced garlic, lemon juice, oregano, paprika, salt, and black pepper. Toss in chicken tenders until coated and let marinate for 10–20 minutes.
  2. Heat a skillet over medium-high heat with a drizzle of olive oil until shimmering.
  3. Lay the chicken tenders in a single layer and cook for 3–4 minutes without moving them until golden. Flip and cook for another 3–4 minutes.
  4. Check doneness using an instant-read thermometer; they should reach 165°F (74°C). Let rest for 2–3 minutes.
  5. Sprinkle chopped parsley over the chicken and serve with lemon wedges.

Notes

For best flavor, allow the chicken to marinate longer if possible. Adjust salt and pepper to taste before cooking.
