Description

A warm and hearty Shepherd’s Pie Casserole with layers of ground beef, mixed vegetables, and creamy mashed potatoes.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper, to taste
  • 3 cups mashed potatoes (prepared from about 3 large potatoes)
  • 2 tablespoons butter
  • 1/4 cup shredded cheddar cheese (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add the chopped onion and minced garlic to the skillet, cooking until softened, about 3-4 minutes.
  4. Stir in the frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, salt, and pepper.
  5. Simmer the mixture for 5-7 minutes until it thickens slightly.
  6. Transfer the beef mixture to a casserole dish, spreading it evenly.
  7. Top with the prepared mashed potatoes, ensuring to cover the filling completely.
  8. Dot the mashed potatoes with butter and sprinkle with cheddar cheese if desired.
  9. Bake in the preheated oven for 20-30 minutes, until the top is golden and bubbly.
  10. Let cool for 5 minutes before serving.

Notes

Serve with a crisp salad or warm bread. For a twist, use sweet potatoes instead of regular mashed potatoes.
