Ingredients

  • 1 cup orzo pasta
  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • Grated parmesan cheese (optional)


Instructions

  1. Prep the ingredients: Dice the chicken, halve the cherry tomatoes, and cut the broccoli into small florets.
  2. Brown the chicken: Heat olive oil in a skillet, add chicken, garlic powder, salt and pepper. Cook until browned, about 5–7 minutes.
  3. Add broth and orzo: Pour in chicken broth, bring to a boil, stir in orzo, then reduce to a simmer.
  4. Add vegetables: Stir in broccoli and tomatoes, continue to simmer until orzo is tender, about 10 minutes.
  5. Final seasoning and serve: Adjust seasoning as needed and serve hot with grated parmesan if desired.
