Ingredients
- 1 cup orzo pasta
- 1 pound chicken breast, diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups chicken broth
- 1 cup broccoli florets
- 1 cup cherry tomatoes, halved
- Grated parmesan cheese (optional)
Instructions
- Prep the ingredients: Dice the chicken, halve the cherry tomatoes, and cut the broccoli into small florets.
- Brown the chicken: Heat olive oil in a skillet, add chicken, garlic powder, salt and pepper. Cook until browned, about 5–7 minutes.
- Add broth and orzo: Pour in chicken broth, bring to a boil, stir in orzo, then reduce to a simmer.
- Add vegetables: Stir in broccoli and tomatoes, continue to simmer until orzo is tender, about 10 minutes.
- Final seasoning and serve: Adjust seasoning as needed and serve hot with grated parmesan if desired.

Serve immediately for the best texture; leftover orzo tends to firm up as it cools.
