Description

A satisfying and budget-friendly dish featuring seasoned beef, melted cheese, and flavorful enchilada sauce wrapped in soft tortillas.


Ingredients

  • 1 pound ground beef
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 8 flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream (for topping)
  • Salt and pepper to taste
  • Optional toppings: diced tomatoes, green onions, cilantro


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef along with the diced onions and minced garlic until the meat is browned. Drain any excess fat.
  3. Mix in the enchilada sauce, seasoning with salt and pepper to your liking.
  4. Place a generous spoonful of the beef mixture onto a tortilla, sprinkle with cheese, then roll it up tightly and place it seam-side down in a baking dish.
  5. Repeat this process until all tortillas are filled with the mixture.
  6. Drizzle any remaining enchilada sauce over the top and sprinkle with more cheese.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Allow to cool slightly, then serve topped with sour cream and your choice of fresh toppings.

Notes

For an extra smoky flavor, add chipotle peppers or smoked paprika. You can also substitute ground beef with shredded chicken for faster preparation.
