Description
A one-skillet creamy Tuscan shrimp dish with garlic, spinach, and sun-dried tomatoes, perfect for weeknight dinners.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3-4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup fresh spinach
- ½ cup sun-dried tomatoes, chopped
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side until pink and opaque. Remove and set aside.
- In the same skillet, add minced garlic and sauté until fragrant, about 30 seconds.
- Stir in the heavy cream and let it simmer for 2-3 minutes until slightly thickened.
- Add the sun-dried tomatoes and spinach, cooking until the spinach wilts.
- Return the shrimp to the skillet, coat with the sauce, and heat through for an additional minute.
- Serve immediately, garnished with grated Parmesan if desired.
Notes
For added depth of flavor, consider adding a splash of white wine or experimenting with other vegetables.
