Description

A one-skillet creamy Tuscan shrimp dish with garlic, spinach, and sun-dried tomatoes, perfect for weeknight dinners.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3-4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup fresh spinach
  • ½ cup sun-dried tomatoes, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)


Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side until pink and opaque. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté until fragrant, about 30 seconds.
  4. Stir in the heavy cream and let it simmer for 2-3 minutes until slightly thickened.
  5. Add the sun-dried tomatoes and spinach, cooking until the spinach wilts.
  6. Return the shrimp to the skillet, coat with the sauce, and heat through for an additional minute.
  7. Serve immediately, garnished with grated Parmesan if desired.

For added depth of flavor, consider adding a splash of white wine or experimenting with other vegetables.
