Description

Bright, buttery croissants filled with creamy chicken salad, grapes, apples, and pecans for a delightful brunch or lunch.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup grapes, halved
  • 1 apple, diced
  • 1/2 cup pecans, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 4 croissants


Instructions

  1. Prepare the chicken and fruit: Shred the cooked chicken and place it in a large bowl. Halve the grapes and dice the apple, then add them to the bowl.
  2. Add the pecans: Chop the pecans and stir them into the chicken and fruit. Optionally, toast the pecans in a dry skillet over medium heat for 3–5 minutes until fragrant, then allow them to cool slightly before adding.
  3. Make the dressing: In a separate bowl, whisk together the mayonnaise and Dijon mustard. Season with salt and pepper to taste.
  4. Combine: Pour the dressing over the chicken, fruit, and nuts. Stir gently until every piece is lightly coated. Taste and adjust salt and pepper.
  5. Assemble the sandwiches: Slice croissants in half horizontally. Fill each croissant generously with about 1/4 of the chicken salad mixture. Serve immediately, or refrigerate the filling and assemble just before serving.

Notes

Reserve a few whole grapes and pecan halves for garnish. For best texture, assemble sandwiches just before serving to prevent sogginess.
