Description

Ingredients

  • 8 oz whole wheat pasta
  • 1 lb lean chicken breast, diced
  • 1 cup Greek yogurt
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 cups spinach
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley for garnish


Instructions

  1. Cook the whole wheat pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat a splash of olive oil over medium heat. Add the diced chicken, seasoning it with salt and pepper. Cook until the chicken is browned and cooked through.
  3. Stir in the minced garlic and sauté for an additional minute until fragrant.
  4. Lower the heat and add in the Greek yogurt and grated Parmesan cheese, stirring until well combined.
  5. Toss the cooked pasta and spinach into the skillet, stirring gently until the spinach wilts and everything is coated in that creamy sauce.
  6. Serve warm, garnished with fresh parsley for a pop of color!
