Ingredients
- 8 oz whole wheat pasta
- 1 lb lean chicken breast, diced
- 1 cup Greek yogurt
- 1 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 2 cups spinach
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish
Instructions
- Cook the whole wheat pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat a splash of olive oil over medium heat. Add the diced chicken, seasoning it with salt and pepper. Cook until the chicken is browned and cooked through.
- Stir in the minced garlic and sauté for an additional minute until fragrant.
- Lower the heat and add in the Greek yogurt and grated Parmesan cheese, stirring until well combined.
- Toss the cooked pasta and spinach into the skillet, stirring gently until the spinach wilts and everything is coated in that creamy sauce.
- Serve warm, garnished with fresh parsley for a pop of color!
Notes
For a richer flavor, sear the chicken in herb-infused olive oil. You can substitute ingredients based on your preferences or dietary needs.
