Description
A hearty breakfast casserole packed with sausage, bacon, cheese, and crispy hashbrowns, perfect for brunch or weeknight dinners.
Ingredients
- 30 oz frozen hashbrowns
- 1 lb breakfast sausage
- 12 oz bacon
- 8 oz cream cheese
- 1 cup sour cream
- 1 packet (1 oz) ranch seasoning mix
- 2 cups shredded cheddar cheese
- 1/2 cup milk
- 6 large eggs
- Salt and pepper to taste
- 2 tbsp butter
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 baking dish with butter to prevent sticking.
- Brown the breakfast sausage in a skillet over medium heat until fully cooked, then transfer to a bowl.
- Cook the bacon in the same skillet until crispy, crumble it, and add it to the bowl with the sausage.
- Blend together cream cheese, sour cream, ranch seasoning, and milk in a large mixing bowl until smooth.
- Whisk in the eggs until well combined, then fold in 1 cup of cheddar cheese, the cooked sausage, and half of the bacon.
- Spread the hashbrowns evenly in the greased baking dish, pour the creamy mixture over them, and smooth it out with a spatula.
- Sprinkle the remaining cheddar cheese and bacon on top.
- Cover with foil and bake for 45 minutes, then uncover and bake for an additional 15-20 minutes, or until golden and bubbly.
- Allow the casserole to rest for 10 minutes before slicing.

Feel free to swap out the types of meat or use dairy-free cream cheese for specific dietary needs.
