Description

A hearty breakfast casserole packed with sausage, bacon, cheese, and crispy hashbrowns, perfect for brunch or weeknight dinners.


Ingredients

  • 30 oz frozen hashbrowns
  • 1 lb breakfast sausage
  • 12 oz bacon
  • 8 oz cream cheese
  • 1 cup sour cream
  • 1 packet (1 oz) ranch seasoning mix
  • 2 cups shredded cheddar cheese
  • 1/2 cup milk
  • 6 large eggs
  • Salt and pepper to taste
  • 2 tbsp butter


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 baking dish with butter to prevent sticking.
  2. Brown the breakfast sausage in a skillet over medium heat until fully cooked, then transfer to a bowl.
  3. Cook the bacon in the same skillet until crispy, crumble it, and add it to the bowl with the sausage.
  4. Blend together cream cheese, sour cream, ranch seasoning, and milk in a large mixing bowl until smooth.
  5. Whisk in the eggs until well combined, then fold in 1 cup of cheddar cheese, the cooked sausage, and half of the bacon.
  6. Spread the hashbrowns evenly in the greased baking dish, pour the creamy mixture over them, and smooth it out with a spatula.
  7. Sprinkle the remaining cheddar cheese and bacon on top.
  8. Cover with foil and bake for 45 minutes, then uncover and bake for an additional 15-20 minutes, or until golden and bubbly.
  9. Allow the casserole to rest for 10 minutes before slicing.

Feel free to swap out the types of meat or use dairy-free cream cheese for specific dietary needs.
